Toulouse, France's fifth city, crossed by the Garonne and the Canal du Midi, is called the Pink City from the colour of the traditional local building materials; earthenware bricks. The art of good living is second nature to Toulouse; local gastronomy is a mix of Gascon and southern influences. The ingredients that you will find on your plate are local products such as duck fat, goose, black pork, beans from Tarbes, ceps, truffles, nuts, pink garlic, Roquefort, goat and cow's cheese, melons and so on. Toulouse restaurants serve food from the region in all its forms; foie gras, conserves, fillets, sautée potatoes, fried potato cakes, mashed potato with Cantal cheese, croustade. However most well known dish remains cassoulet based on Toulouse sausage, haricot beans with duck or goose fat. The pleasures of the palate are always guaranteed.
